This easy and delicious dinner comes together in a snap. It’s perfect for a busy weeknight, but pretty enough to impress guests, too. Who says cooking fish is hard?
Asian Glazed Salmon with Summer Salad Printable Recipe
Serves 2
2 salmon filets
1 tbsp Thai sweet red chili sauce, such as Thai Kitchen
1 tbsp soy sauce, preferably low-sodium
3-4 cups spring salad mix
1 pint blackberries
1-2 tbsp feta cheese crumbles
1/4 cup walnuts, coarsely chopped
1-2 tbsp poppy seed dressing, such as Brianna’s
Set oven broiler to high. Pat salmon dry with a paper towel. Mix Thai chili sauce and soy sauce together with a whisk, brush over salmon filets.
Place salmon on a foil or parchment-lined baking sheet and broil on high 8-10 minutes, or until it flakes easily with a fork. 8 minutes under my broiler is perfect. You don’t want to overcook the salmon. Set aside.
In a large bowl, toss salad greens, berries, feta and walnuts with dressing. Divide salad equally between two plates.
Top each salad with a salmon filet. Enjoy!
So easy and so delicious. A perfect summer dinner. This would be great with all kinds of other fruit or nuts substituted. Go dig around in your fridge and use what you have! I like the saltiness of the feta as a counterpoint to the sweetness of the poppy seed dressing, but you could easily leave it out. Have fun with it.
